Beet-Crusted Goat Cheese Balls

There are a few different “buzz foods” that jump out at me whenever I see them on a menu. Words like avocado, bacon and goat cheese usually steer me towards making a decision about what to order. And if I see that beets are on the same plate as goat cheese, that’s definitely what I’m getting.

I remember ordering this particular salad at one of my favorite restaurants near my old house in Maryland- it had mixed greens, beets and fried balls of goat cheese on the top. The goat cheese balls were crispy fried goodness on the outside and warm and creamy inside. I had thought about trying to make my own goat cheese balls at home a while ago, but didn’t think about it again until I received a box of goodies from The Better Chip.

The different flavors of chips from The Better Chip are delicious on their own of course, but I love to use them as a healthier, all-natural “crust” more than anything. When I saw the beet flavored chips, I immediately knew what I wanted to do with them: make beet-crusted goat cheese balls!

The process if very similar to how I made fish sticks (and super easy!):

You only need three ingredients: goat cheese, an egg and beet-flavored chips from The Better Chip. (You could also make a cold version omitting the egg and just using goat cheese and chips!)

The goat cheese balls could be enjoyed by themselves or on top of a salad of mixed greens.

Just like the goat cheese balls that I remembered from that restaurant- these were crunchy on the outside and warm and creamy inside.

Beet-crusted Goat Cheese Balls

6 oz goat cheese

1 egg

2 oz. The Better Chip beet chips

Crush the chips into small pieces and place on a small, shallow plate. In a small bowl, whisk one egg and set aside. Cut the goat cheese into eight equal pieces and form each into the shape of a ball. One by one, coat each goat cheese ball in the egg and then roll in the crumbled chips until fully covered. Place all goat cheese balls on a plate and freeze for one hour. After an hour, remove from freezer and place on cookie sheet coated with nonstick spray. Bake in an oven heated to 400˚for 5 minutes. Remove from oven- serve immediately!
