Hellllloooooo! Forgive the super short post today (and other short or non-existent posts that may follow this week)- things are super busy around here! Despite the chaos going on in my life right now, things are great! The weekend was pretty much go-go-go, but that seems to be par for the course lately. To keep it short and sweet today, here’s a few images and anecdotes from the last few days:


Greg and I went skiing for a few hours on Saturday morning. The season ends in a few short weeks, so we’re trying to make the most of it while we still can! The snow was a bit icy (and super fast on Saturday), and somehow I managed to do my first ever Black Diamond run! It was steep and scary, but I made my way down! I think I’ll still stick to blues for a while- but it’s still good to know that I can handle the challenge (very slowly….).

We met up with our friends John and Tiffani, who are snowboarders:


John is Greg’s best friend from way back and moved out to Colorado a few years before we did. He and Greg are expert skiers/snowboarders and Tiffani and I are still newbies. It’s nice to have a couple to go with that’s at the same level as both of us!

After a full morning of skiing, we drove 45 minutes back to Boulder and changed into flip-flops and shorts:


That’s one of the 10,000,000 things that I love about living here. You can drive an hour away and enjoy the snow and then have a completely different climate back home!

I learned to play Farkel this weekend:


It’s mindless, simple and super fun. :)

And finally… I am currently obsessed with FlapJacked Buttermilk pancakes. And luckily, since I work for them, I have a constant supply! I have gone through phases of loving both the Cinnamon Apple and Banana Hazelnut, but have been on a Buttermilk kick for over a week now. In fact, I’ve had this very same breakfast 6 out of the last 7 days:


Here’s my favorite “recipe” for the Buttermilk variety: 1/2 c. pancake mix, 1/4 c. egg whites, 1/4 c. water, 1/2 tsp. vanilla extract, 1/2 c. berries (I used a mix of blueberries, strawberries and blackberries for these). Walnuts make a great topping- and I always use real syrup and butter. There’s really not a whole lot better than the butter-syrup-pancake combo!

  2. Black run! Watch out! I was queen of greens this weekend – they were tough in the afternoon when it turned icy!

  3. I need to try some of these buttermilk pancakes with berries! I received a packet of the apple cinnamon to try at the King Soopers event last October and LOVED it – so simple to make. OH, and Farkel is my boyfriend’s family’s favorite game ever, so I’m not stranger to it… it’s so silly!
