Season of Giving [Day 3] + Rosemary Ginger Spiced Carrots

As promised, I’m back to announce today’s featured item in the #SeasonOfGiving!

Before I get to the giveaway, I want to share a delicious recipe that I created yesterday. I’m a big fan of roasted carrots. If you haven’t tried them yet- you’re missing out! As I was sipping on a cup of Bhakti Chai last week I thought about how great the combination of the ginger spice would be with roasted carrots. A few days later, I finally got to work!

Bhakti Chai is unique from any other type of chai tea I’ve ever had because of it uses lots of fresh-pressed ginger to make the concentrate. It also contains a unique spice blend, but ginger definitely takes center stage.

I also found out recently that Bhakti Chai is great for baking! I’ve been coming up with a few sweet & savory recipes using the concentrate. Truth be told, my favorite way to enjoy Bhakti Chai is still mixed with equal amounts of Silk. However, this new recipe listed below might just give that typical chai latte a run for it’s money. :)

Rosemary Ginger Spiced Carrots

5 medium carrots (about 2 1/2 cups)

1/3 c. unsweetened Bhakti Chai concentrate

1 T extra virgin olive oil

1 T rosemary (divided)

1/4 tsp. sea salt

Chop carrots into pieces that are about 1/2″ thick. In a bowl, whisk together Bhakti Chai concentrate, olive oil and 1/2 T of the rosemary. Add carrots to marinade and stir until all pieces are coated. Let sit in the fridge for at least 6 hours- preferably overnight. When ready to cook, heat oven to 400˚. Spray a cookie sheet with nonstick spray and spread carrots out evenly. Sprinkle remaining rosemary and sea salt over the carrots and bake for 25 minutes (stirring twice while baking).

The carrots have a sweet & salty flavor and are just delicious. If you don’t eat all of them right away, be sure to store any remaining carrots in the refrigerator in a covered container.

They’re great right out of the oven- but might be even better as cold leftovers. Make them and judge for yourself!

  32. I’m going to say strong. When I left treatment from an Ed we held a rock ceremony where everyone would choose two rocks with two adjectives that described you on it. One of my words was strong, and while I’ve never thought of myself as strong before I am starting to now because no matter what I always try to keep fighting and moving forward.

    Also I began lifting and can now do pull-ups push-ups and you name it! I love to flex;)
