Yesterday, I gave you a sneak peek of my delicious tofu dinner on Monday night.
This is a recipe that I am still trying to make perfect but for now… it’s pretty darn near close.
As I said yesterday, this recipe was inspired by a delicious tofu dish that I had in Colorado. It was at a restaurant called Leaf in Boulder, and it was one of my favorite bites during my entire trip! The”apple” in that recipe actually referred to apple wood smoked tofu, but I decided to make apple have a greater role in the recipe itself. I’d be curious to actually grill the tofu on top of apple wood sometime… I bet that would make it perfect.
Smoky Apple Maple-Glazed Tofu
1 package extra firm tofu (drained and pressed over night)
1/3 c. apple cider (or apple juice)
1 T maple sugar or maple syrup
1 tsp liquid smoke (adjust to taste)
1 tsp balsamic vinegar
1 tsp olive oil
pinch of salt
Cut drained/pressed tofu into 8 equal slices. Whisk together remaining ingredients in a bowl to make the marinade. Place the tofu into the marinade, cover and let sit for at least 8 hours (preferably overnight!). When ready to prepare, pre-heat oven to 400˚ and remove the tofu from the marinade (SAVE THE MARINADE!). Place the tofu slices onto a cookie sheet (preferably onto a silicon baking mat). If you don’t have a silicon baking mat, use coat the cookie sheet with non-stick spray. Bake for 20 minutes on one side, then flip tofu over (it should be golden brown on the side that was on the bottom first). Bake for an additional 10 minutes, or until golden brown.
Place a small skillet on the stove top over medium heat. Pour the remaining liquid from the marinade into the pot, stirring often for a few minutes. If it doesn’t thicken, add a pinch of cornstarch and stir. Pour the heated marinade over the tofu to glaze.
I also mixed a little of the marinade into some steamed spinach and roasted red onions. I highly recommend it.
