Do you ever have one of those days where every single bite of food is delicious?
I actually try to make every day like that, because there’s just way too much good food out there to settle for something sub-par. In fact, there’s not much that bums me out more than having a bad meal at a restaurant (first world problems, I know).
Monday was one of those delicious days…. and it all started with breakfast.
After an early morning of teaching Spinning and Bodypump,I was craving pancakes! I came right home and whipped these up!
Peanut Butter Banana (high protein) Pancakes
3 T Peanut flour
2 T coconut flour
1 T egg white protein
1/4 tsp baking powder
1/3 liquid egg whites
1-2 T almond milk
sweetener of choice, to taste
Mix dry ingredients together in a small bowl. Add in egg whites and whisk gently. Add almond milk to reach desired thickness. Drop “piles” of 3 T full of batter onto a skillet over medium heat. Cook until edges are golden brown. Flip, and cook one additional minute.
I also cut up bananas and let them grill on the skillet for about 30 seconds on each side to top these off. Yummmmmmmm….
For lunch, I started with a salad made of romaine lettuce, roasted carrots and eggplant, cucumber, tomato and chopped peanuts.
I also had a bowl of “high protein cereal” that I made from 1/2 of a P28 flat bread.
(I promise that I’ll go into more detail about this one soon!)
A little later I munched on a few of these chickpeas that Heather sent to me (they’re so addictive!)
I also made a smoothie with Sunwarrior vanilla protein powder, peanut flour (again!), almond milk and one whole apple.
I sprinkled a little sea salt on top, which just makes everything better!
For dinner, I made smoky apple maple glazed tofu.
I got the idea for this from the amazing tofu that I had in Boulder, and am still trying to perfect the recipe (which I’m hoping to have ready for tomorrow). I had it along with roasted Brussels sprouts and sweet potato.
Dessert was a satsuma orange (I’ve been obsessed with these ever since discovering them last month!)
And a piece of Mexican chocolate.
That was an impulse buy from the store the other day. Can you blame me?!
