WIAW 14: I ♥ Breakfast

Last Friday was one of those days where the best meal was the first one of the day. Don’t get me wrong- everything was delicious (because there’s no excuse for a sub-par meal!), but breakfast was just extra special.

Do you know what that is? Yup- it’s a sweet breakfast burrito. Or, technically, two sweet breakfast burritos. After making vegan breakfast burritos for Greg for the last month, I finally decided to try out a sweet version for myself.

And don’t worry- I’ll be back with the recipe tomorrow.

Lunch was also pretty darn delicious.

This was leftover taco “meat” (mashed kidney beans and tempeh with taco seasoning) over mixed greens, red onion, cucumber and tomato slices. It was all topped off with some homemade guacamole, salsa and crushed tortilla chips.

I also snacked on a few of these delicious Wasabeans that Laura sent me. :)

For a late afternoon snack, I made a mug of TVP “oatmeal” with some almond butter on top. Notice the puppy legs in the background?

Greg and I usually make pizza on Friday nights, but he had to work late. I saved the pizza idea for the next night and threw together a quick and tasty dinner:

That’s three Gardein “chicken” tenders (with dijon mustard and BBQ sauce for dipping), sauteed kale with nutritional yeast and a baked sweet potato.

I recently changed up the way I think about desserts. I don’t know about you, but I need to have something sweet after dinner. I found myself making a “healthy” dessert every night that easily added up to and extra 200-300 calories. Instead, I decided to designate Sundays as “dessert” night and enjoy a big bowl of ice cream (my favorite dessert) on that one night. On the other nights, I tame my sweet tooth with one of these:

One beautiful, crisp apple. Sometimes I get crazy and have a pear instead! Oddly enough, it’s enough to curb my sweet cravings. It also makes me appreciate my “dessert night” even more.

I also had a cup of the best tea ever:

  2. I am the same way about dessert – particularly ice cream. I’ve just stopped buying it, for the most part because if it is in the house, I will eat it! Have a great trip!

  4. What a great idea for taco “meat”! Also I LOVE the celestial seasonings holiday teas! I’ve been addicted to the gingerbread spice lately, but the sugar cookie is next on my list! Can’t wait to see the sweet burrito recipe :) Happy Wednesday!

  6. Those sweet burritos are such a good idea! And that taco salad looks amazing.

    Did you add anything to your tea? I tried it a few years ago when it first came out and I really just didn’t like it. Maybe my taste buds have changed though and I should try it again?!

  9. I’m so glad you are digging the beans… and the TVP oats! I think I could eat them every day.

    Dessert is the same way for me – I have to feed the sweet tooth. I try to wait at least an hour to decide what I really want rather then feeding the beast. Often it’s Carrot Cake Batter yogurt, cottage cheese creations, or protein cakes.

  14. YUM! Love the idea for one dessert night. I am trying to only even do a healthy dessert 2-3 times a week instead of every night.. hate making things like that a habit, so i feel like i NEED it every night! flavored tea is very helpful for this! sugar cookie and gingerbread are the best! :-)

  15. I’m so jealous you are in Colorado right now! I just placed an order for three different Celestial Seasonings holiday teas (plus some Lucuma Powder and CRUNCHY Earth Balance Coconut Spread…clearly things I obviously needed to own) on a vitamin website—vitamins? tea? whatever? I haven’t tried the teas but everyone raves…and I can’t find them anywhere!
